- Vegetable oil or coconut oil
- 4 medium apples (Granny Smith, Gala, Golden Delicious)
- 1/2 cup sugar, plus 2 tablespoons (divided)
- Add 1 teaspoon ground cinnamon, plus 1/4 teaspoon (divided)
- 1 large egg
- 1/2 teaspoon vanilla extract (optional, but recommended)
- 3/4 cup 2% or whole milk
- 1 cup all-purpose flour, plus 2 tablespoons
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
Instructions
- Pour enough oil into a large cast iron skillet or heavy saucepan to create at least a 1-inch depth.
- Heat the oil to 365°F over medium-high heat. If you’re using a saucepan, less oil can be used, but you’ll need to fry fewer at a time.
- While the oil is heating, slice the apples crosswise into 1/4-inch thick rings. Use a small round cookie cutter to remove the core, leaving about 3/8-inch of apple flesh intact. Don’t discard the cores—you can chop them up and add to a chicken salad or save as a healthy snack.
- In a small bowl, mix 1/3 cup sugar with 1 teaspoon cinnamon to create a cinnamon-sugar coating.
- In a medium bowl, lightly whisk the egg and gradually add the milk.
- Add the flour, then top with 2 tablespoons of sugar, baking powder, and salt.
- Lightly whisk the dry ingredients on top before fully mixing everything together. (This saves you from using an extra bowl!)
- Check the oil temperature—it should be 365°F. Using tongs, dip the apple rings into the batter, allowing the excess to drip back into the bowl. Fry 3 or 4 rings at a time for 1-2 minutes, or until golden brown.
- Once fried, let the apple rings drain on paper towels for a minute before dredging them in the cinnamon-sugar mixture while still warm. Use tongs to ensure they’re well-coated.
