- 1 yellow cake mix (15 oz) + ingredients on the box
- 1 can of crushed pineapple in juice (15 oz)
- 1 package cream cheese (8 oz)
- 1 box instant vanilla pudding (3 oz)
- 2 cups whole milk
- 1 tub cool whip (16 oz)
- 1 ½ cups sweetened shredded coconut
Instructions
- Preheat your oven to the temperature on the cake mix box.
- Grease a 9×13-inch baking dish.
- Prepare your batter according to the mix directions and bake the cake for the time directed.
- In a large bowl and as the cake bakes, add cream cheese, vanilla pudding mix, and milk and beat until smooth and starting to thicken.
- While the cake bakes and cools, place the pudding mixture in the fridge to chill for at least 30 minutes.
- After the cake has cooled, use the handle of a wooden spoon to poke holes all over the cake, going about halfway down without reaching the bottom. Then, pour the pineapple with its juices over the cake and gently spread it into an even layer.
- Spread the pudding mixture over the pineapple, then finish with a layer of Cool Whip on top.
- Sprinkle coconut over the cake and chill until ready to serve.
