- 1 1/2 pounds lean ground beef
- 1 envelope taco seasoning 1 ounce
- 10 ounces Rotel tomatoes & green chiles drained
- 1 cup shredded cheddar cheese
- 1/2 cup Bisquick mix
- 1 cup milk
- 3 large eggs
Instructions
- Preheat your oven to a toasty 400º Fahrenheit.
- Lightly coat a 9-inch round deep dish pie plate or cake pan with a fine mist of cooking spray.
- On a medium flame, in a skillet, sauté the ground beef until it loses its pink hue. Eliminate any excess fat.
- Incorporate the taco seasoning and the well-drained Rotel into the beef. Stir thoroughly and allow it to heat completely.
- Distribute the beef concoction evenly across the base of the prepared pie plate.
- Generously sprinkle shredded cheese over the beef layer.
- In a separate small bowl, combine the Bisquick mix, milk, and eggs. Whisk until the mixture achieves a uniform consistency.
- Pour this mixture evenly over the beef and cheese.
- Bake for 25 to 30 minutes, or until the center of the pie has firmed up and the top surface boasts a golden-brown hue.
- The knife should come out clean when inserted into the center.
- Serve promptly.
- Store any remaining portions in the refrigerator for up to three days.
