  • 1 envelope taco seasoning 1 ounce
  • 10 ounces Rotel tomatoes & green chiles drained
  • 1 cup shredded cheddar cheese
  • 1/2 cup Bisquick mix
  • 1 cup milk
  • 3 large eggs

Instructions

  1. Preheat your oven to a toasty 400º Fahrenheit.
  2. Lightly coat a 9-inch round deep dish pie plate or cake pan with a fine mist of cooking spray.
  3. On a medium flame, in a skillet, sauté the ground beef until it loses its pink hue. Eliminate any excess fat.
  4. Incorporate the taco seasoning and the well-drained Rotel into the beef. Stir thoroughly and allow it to heat completely.
  5. Distribute the beef concoction evenly across the base of the prepared pie plate.
  6. Generously sprinkle shredded cheese over the beef layer.
  7. In a separate small bowl, combine the Bisquick mix, milk, and eggs. Whisk until the mixture achieves a uniform consistency.
  8. Pour this mixture evenly over the beef and cheese.
  9. Bake for 25 to 30 minutes, or until the center of the pie has firmed up and the top surface boasts a golden-brown hue.
  10. The knife should come out clean when inserted into the center.
  11. Serve promptly.
  12. Store any remaining portions in the refrigerator for up to three days.
